Operation Shrink Your Body – Day 87 & 88 – Spring Brunch Recipe

Spring is a time to celebrate! For those wanting to add another easy brunch recipe to their recipe box, here is our favorite quiche recipe we had yesterday:

Cheese Quiche

Serves: 6-8
Ingredients
  • 1 prepared pie crust
  • 1 cup egg substitute or 4 eggs
  • 1 cup low fat milk
  • 1-1/2 cups low fat cheddar cheese, shredded
  • 1-1/2 cups Swiss cheese, shredded
  • 1/2 cup evaporated milk (instead of heavy cream!)
  • 3 tablespoons flour
  • 1 teaspoon salt free seasonings
Instructions
  1. Preheat oven to 375 degrees. Place pie crust over pie pan.
  2. Sprinkle cheeses over prepared crust.
  3. In a medium bowl, mix the rest of the ingredients and pour into the prepared pie pan over cheese.
  4. Bake for 30 to 35 minutes or until a knife comes out clean.
  5. NOTE: I usually cover the quiche with a piece of foil paper once the crust has reached a golden brown color.
