Cranberry Orange Scones

1 large egg or 1/4 cup egg substitute

1/2 cup skim milk

2 cups all-purpose flour

1 tablespoon baking powder

5 tablespoons cold butter, cut into small pieces

3/4 cup cranberries

1 teaspoon greated orange zest

Directions:

  1. Preheat oven to 400 degrees F.
  2. In a small bowl, whisk egg and milk together. Set aside.
  3. In a medium bowl, mix flour and baking powder together. Add remaining ingredients including egg mixture while blending the butter with a fork or fingers. Mix until all the ingredients form a dough.
  4. Spoon 10 to 12 mounds of dough onto a baking sheet and bake for 10 to 12 minutes or until golden brown. Serve warm with your favorite jam 🙂

Yield: 10 to 12 scones
