Sweet Potato Macaroni and Cheese

Serves: 10 servings (1/2 cup each)

 

3 medium sweet potatoes, peeled and spiralized

1 tablespoon vegetable oil

2 cups Good Karma Flaxmilk

1/2 cup Monterey style cheese alternative, shredded

1 cup cheddar style cheese alternative, shredded

1/4 cup Follow Your Heart Parmesan Style Cheese Alternative, shredded

1 teaspoon ground black pepper

1 teaspoon salt

Preparation

Preheat oven to 350° F.

Spiralize the sweet potato and set aside on paper towels so that any excess water is soaked up.

In large sauce pan add oil and cook until sweet potatoes noodles are tender, 10 to 15 minutes. Transfer to a 9×13 glass baking pan.

Meanwhile, heat flax milk and add cheeses until melted. Add “cheese style” sauce to sweet potato noodles and sprinkle with “Parmesan style cheese.”  Bake at 350° F. for 15 to 20 minutes or until “cheese” sauce is hot. Serve hot.
