How to Make a Delicious and Healthy Hungarian Goulash

While in Budapest, a group of dietitians ventured into a Hungarian cooking class. To my delight it was so much fun and very simple. My husband who came with me to Budapest, truly enjoyed the Goulash and asked me to make this delicious and healthy dish at home. So here is my first attempt at making this hearty and tasty famous Hungarian dish that could be a lunch meal or a great dinner. Follow the steps to a delicious Goulash.

Step by step preparation:

Gather all your ingredients:

2 tablespoons vegetable oil

1 medium white onion, diced

1 to 2 tablespoons sweet paprika

1/4 teaspoon caraway seeds, ground

1 teaspoon salt

1/4 teaspoon black pepper, ground

3 bay leafs

3 garlic cloves, chopped

1 pound beef (sirloin or favorite cut), cut in cubes

2 large tomatoes, diced or 1 (14.5 oz) canned diced tomatoes

1/2 cup yellow pepper, diced

3 medium carrots, peeled and sliced

1 cup parsnip, sliced

1 cup celery, sliced

2 cups small potatoes, cut in wedges

4 to 6 cups seltzer water (secret ingredient) – enough to cover veggies & meat

Preparation:

In a large skillet, heat oil at medium heat and cook the onions until tender.

Add paprika and continue cooking for a couple more minutes.

Add the meat and seasonings; continue cooking until meat juices run clear.

Add remaining vegetables, seltzer water and continue cooking until vegetables are tender. Or you may transfer all ingredients to a Crockpot/slow cooker and cook for 5 to 6 hours on high. Serve hot with noodles or sliced bread.
